The high altitudes (> 900 m) of Santa Catarina State (SC), in the South of Brazil, suitable conditions for the production of white wines are found. The mild temperatures during the maturation period allow the maintenance of ideal levels of acidity and the preservation of aromatic compounds, giving freshness and typicity to the white wines of these regions. The objective of this work was to evaluate the enological potential of 21 white grape varieties grown in a high altitude region of Santa Catarina State. The study was carried out with a collection of grape varieties planted in the Agricultural Research and Rural Extension Company of Santa Catarina -
São Joaquim Experimental Station (EPAGRI-EESJ), in the 2015 harvest. The geographical coordinates of the vineyard are 28°17'39 "S, 49°55'56" W and the altitude is 1,415 m asl. The evaluated varieties were: Bianca, Bronner, Chardonnay, Coda di Volpe, Fiano, Garganega, Greco di Tufo, Manzoni Bianco, Marsanne, Moscato Giallo, Petit Manseng, Pinot Grigio, Prosecco, Ribola, Riesling, Sauvignon Blanc, Solaris, Trebbiano Toscano , Verdelho, Vermentino and Viognier. On harvest day, samples of 30 kg of grapes per variety were taken to the Laboratory of Oenology of the University of Santa Catarina State, in Lages-SC, where they analyzed for grape must basic parameters and by microvinification process. At the time of bottling, the wines were analyzed for alcohol content, titratable acidity (TA), pH, wine color and total polyphenols.The earliest variety was Solaris, with the harvest held on January 15th. The other varieties were harvested between March 15th and April 15th. Regarding the grape must: the density ranged from 1,068 to 1,093 g ml -1; Soluble solids (SS) ranged from 17 to 21.7 ° Brix, the lowest value observed in Bianca berries and the highest in Petit Manseng; Greco di Tufo grape must showed the highest AT value and Bianca the lowest, 155.4 e 81.6 meq L-1, respectively. In the wines: Garganega, Petit Manseng and Greco di Tufo wines showed titratable acidity above the maximum limit allowed by Brazilian legislation (130 meq L-1). The lowest value of color intensity was observed in Ribola wine, and the highest in the Petit Manseng wine. Solaris wine had the lowest total polyphenol content, 161.2 mg L-1 GAE, and the highest value was observed in Greco di Tufo wine, 452.6 mg L-1 GAE. Based on the analyzes carried out, the varieties that presented oenological potential for the elaboration of fine wines were: Bianca, Bronner, Chardonnay, Coda di Volpe, Fiano, Manzoni Bianco, Marsanne, Giallo Moscato, Pinot Grigio, Prosecco, Ribola Gialla, Riesling Renano , Sauvignon Blanc, Solaris, Trebbiano Toscano, Verdelho, Vermentino and Viognier.
